I love fresh pasta but dried pasta is much more convenient - has anyone found any brands of dried pasta that are as good as fresh? Or nearly as good?

Hiya I tried some De Cecco spaghetti after I saw it in a taste test in Taste Italia magazine as it got a really good review. It was brilliant - maybe not quite as good as fresh, but certainly a good choice and much more convenient. Might be worth a try, anyway. I haven't tried any other varieties of dried pasta that have been great, though, so tell me if you find any...

Garofalo di Gragnano pasta is the best dried pasta I have been able to easily find in the UK. There are other brands I try to pick up in delis in London etc but our local Tesco here sells Garofalo so it's easy to treat yourself without going too much hassle! Reasonable prices too, just a little more than you might pay for De Cecco for example. Garofalo is made on traditional bronze dies so it has a rough surface that sauces cling to better and the pasta holds a really good bite. Buon appetito! (p.s. fresh pasta isn't necessarily any "better" than dried - they're two very different things, each with its own characteristics that suit different recipes. Don't do yourself a disservice in thinking that dried pasta is cheating or being lazy!)

I agree - good dried pasta has more flavour than you'd think, it's certainly worth paying a bit extra for a good quality Italian brand. I'd like to try my hand at making fresh pasta though - does anyone have any tips?
