My friends were on holiday in Tuscany recently and bought me some sundried tomatoes while they were there. I'm not sure what to do with them. Does anyone know how I go about preserving them in oil?

Aren't they already preserved? I think once they have been dried you can put them under oil, but the ones you have sound like they need rehydrating with water. I think when you want to use them, you just soak them in warm water for about 20 minutes until they soften and then drain them. You can reserve the soaking liquid for adding to a sauce if you're making one or tomato risotto. Once they are softened they are good to use in sauces or on pizza etc.
