It's not at all extensive but may be a good start?! There's this one for Florence: http://www.lodging.it/florence-tour/bars-&-cafes/florence-wine-bars.html
and I imagine there will be other regional listings, but it doesn't seem to be a topic that's very well covered online. I like using tripadvisor, but they focus on hotels and restaurants more than bars. Let me know if you find anything better.
Maybe we should start a new resource for Italian wine bars - it's obviously something that's lacking!
