cooking Sauces

Does anyone have any tips on how to cook sauces on top of the hob with gas, I like to cook the sauce for at least one hour or more, but find that although I have my gas turned to the lowest , it always ends up sticking and drying out to much?

I think you need a heat diffuser. It's just a metal disc which you place over the gas or electric plate. It limits the amount of heat that reaches the pan. You can buy them really cheaply and they are widely available at cook shops or online. Hope that helps!

many thanks Greedymiss, I have tried the heat diffuser, still have not got it right yet. It must be my gas hob. At the moment I am putting a sauce on Saturday afternoon, on a low heat in the oven, and go shopping, it seems to work. Grazie tanti!!!
